
I have been making these for years. They used to be my favorite. Now I think they could use slightly less sugar. Try using a little less than this recipe calls for or a splenda baking blend.
You will need:
- 1/2 cup of sliced almonds
- 1 2/3 cup of flour
- 1 cup of granulated sugar
- 1 TBSP of pumpkin pie spice
- 1 tsp of baking soda
- 1/4 tsp of baking powder
- 1/4 tsp of salt
- 2 large eggs
- 1 cup of plain pumpkin
- 1/2 cup of melted butter
- 3/4 cup of chocolate chips (Personally, I recommend the mini-morsels because you get more chocolatey bites and they aren't as gooey)
Preheat oven to 350. Toast almonds 5 minutes. Grease muffin cups or use liners. Mix dry ingedients in a large bowl. In another bowl mix eggs, pumpkin and butter. Then add chocolate and almonds. Pour wet mixture over the dry ingredients and fold until just moistened. Scoop into muffin pan. Bake 20-25 minutes or until springy. Cool and store in plastic bag.
Beware: These are a whopping 320 calories per muffin. (Recipe makes 12 in a regular muffin pan)
